Foot Age and Veggies

Jacob: "Mom, I just left a message for Cutesy."
Me: "Oh really? How did you do that?"
Jacob pointed to the "2" button on the cell phone - the speed dial for my mom. "I pushed that."
"Oh, and you left her a message?"
"Yep."
"What did you say?"
"I told her to bring me a new bakugan next time she comes."
"Yeah, and what are you going to give her?"
"Um, I'll buy her some shoes...Um, Mom, what age are her feet?"

Oh how I love my Jacob...My favorite thing to do is look at his dark brown eyes and the freckles on his nose and kiss his soft cheeks. One day he'll be big and tough (he told me so), and I won't be able to do that anymore. I love that I am his favorite person right now (unless I'm not and Rus is), and I love how he tells me that all the time. He just learned our home phone number and has had a lot of fun using my cell phone to call me...from the next room. Today he was cleaning his room and gave me progress reports via phone call every five minutes. I'm sure that Gail, the piano tuner who was here, was shaking her head at "children these days," and the gadgets they are accustomed to. Gail was here to tune my very out of tune piano because Bekah just started piano lessons and I thought that the keys should make the sounds they are supposed to. I've been trying to talk Bekah into piano lessons for months and finally just set it up and dropped her off. She had a great time and has spent the last week playing the same song on the piano, over and over. I love it. Really.
On another note...I spent at least an hour last night looking for recipes that are veggie-heavy. I have been shifting to more veggies steadily the last several months and I've just needed more recipes that have them. I was stunned by a quote that said, basically, if Americans were to eat the five vegetables a day that we are supposed to, there would not be enough vegetables for every one because our country does not grow enough. Our country is heavy on meat, not vegetables. I like meat, believe me...but I understand how unhealthy it can be when fruits and vegetables are neglected or ignored completely. So I'm trying to incorporate them more so that the meat is the "side" and the vegetables are main and delicious. I am trying this, this, and this recipe this week and we'll see how it goes. And if I kill Rus or not...he's a reluctant sidekick who I'm sure will enjoy plenty a hamburger or steak on his lunch hour. Do any of you have favorite-must-have recipes that showcase vegetables? I'd love it if you shared!

How exciting that Bekah started piano lessons!! And YAY for getting that piano tuned!!! :D When are we gonna hang out?

Hurray for Bekah! That is very exciting. And yes, getting your piano tuned will help a lot with her progress. :) If you need practicing tips so you don't have battles like me and Isaac, let me know.

Also, the veggie fact is crazy. We are doing the same at our house, so I'll email you anything good I find. Thanks for sharing your recipes.

Your veggie idea is really good idea. I need to do that at our house. The only veggie main dishes I have are different kinds of salad and zucchini casserole. Let us know how your dinners go. Good luck.

How fun for Bekah to have piano lessons! I love it when my kids are in piano lessons :)
One of our favorite veggie recipes is:

Greek Salad
Browned chicken (opt).
romain lettuce
cucumbers
zuccini
roma tomatoes
red onions
olives
feta cheese
mushrooms
bell peppers
any other veggie you want to throw in it

dressing:
equal parts lemon juice and olive oil
1/4 - 1/2 tsp for each of the following
salt, basil, oregano, lemon pepper,
1 clove garlic finely chopped

We have been trying to eat mostly vegetarian for a while (about a year and a half). What I mean by that is when we eat dinner, we eat it without a meat. We are not vegetarians we just decided we wanted to eat less meat (long story) but you have enough opportunities to eat meat when you are at a church event, invited to dinner, etc. So we just make our dinners at home meatless. A lot of times I make what is usually a side dish the main dish. So just double the recipe of... say... scallop potatoes or a zucchini casserole. And then substitute- chicken enchiladas for example? I would add pinto beans instead of the chicken. We like it like that. So basically we eat meat with company and a regular dinner we leave out the meat and add more of what other vegetables or whatever is in there. Hope that helps. :)

Bwahaha...I knew that Jacob was brilliant! oh my gosh Keri...I just wrote a blog about how much I love meat. You have inspired me!! Living with a Vegan, it is amazing the recipes I have....but they all include these really random spices like ferrugeg....who names these? I will have to call you for the others! Hilarious.
